Alain Ducasse has opened his first restaurant in Morocco — 33 floors above Rabat and Salé.
The French chef has launchedAldabaraninside theWaldorf Astoria Rabat-Salé, in the Mohammed VI Tower.
The 66-seat restaurant is located on the33rd floor, with views across Rabat, Salé, the Bouregreg and towards the Atlantic.
It marks Ducasse’s first restaurant in Morocco and adds another international name to the capital region’s expanding luxury-hospitality scene.
A Mediterranean Menu With Moroccan Produce
Aldabaran is built around Ducasse’s Mediterranean cooking style.
The restaurant describes the menu as inspired by theFrench Riviera, with an emphasis on seasonal ingredients and produce sourced in Morocco where possible.
The kitchen is led by chefMorgan Perrigaud.
Dishes include line-caught sea bass, roasted lamb and a Tropézienne tart scented with orange blossom.
The restaurant is not positioned as traditional Moroccan cuisine.
Instead, the concept combines Ducasse’s Mediterranean approach with ingredients available locally.
Dining Above Rabat-Salé
The setting is central to the experience.
The Mohammed VI Tower rises to around250 metres, making it one of Morocco’s most recognisable new landmarks. Waldorf Astoria occupies its upper floors.
From the restaurant, diners can look across the twin cities and the Bouregreg valley.
That gives Aldabaran a clear identity from the start: international fine dining in one of the country’s most distinctive new buildings.
Part Of A Changing Hospitality Scene
Aldabaran opens as Rabat-Salé continues to attract more luxury hospitality projects.
Waldorf Astoria Rabat-Salé opened earlier in 2026 with55 rooms and suites, several dining concepts, a spa and a large private art collection.
The arrival of Ducasse adds a new culinary element to that development.
For Morocco, the opening is also another example of how international hospitality groups and chefs are increasingly looking beyond Marrakech and Casablanca.
Rabat-Salé is becoming part of that conversation.
And now, 33 floors above the Bouregreg, Alain Ducasse has added Morocco to his restaurant map.
